Samak is a traditional Sudanese dish that features spiced fish cooked in a flavorful tomato stew. This hearty and aromatic stew is a staple in Sudanese cuisine, and it's perfect for a comforting and satisfying meal.
Ingredients
- 4 fish fillets (such as tilapia or cod)
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 1 cup fish or vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Season the fish fillets with salt and pepper.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, ground cumin, ground coriander, ground turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Pour in the diced tomatoes and fish or vegetable broth. Bring the mixture to a simmer.
- Gently add the seasoned fish fillets to the pot, spooning some of the tomato mixture over the top of each fillet.
- Cover the pot and let the fish simmer in the stew for about 15-20 minutes, or until the fish is cooked through.
- Adjust the seasoning with salt and pepper as needed.
- Serve the Samak hot, garnished with fresh cilantro.
