Ingredients

  • 4 fish fillets (such as tilapia or cod)
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1 cup fish or vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Season the fish fillets with salt and pepper.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
  3. Add the minced garlic, ground cumin, ground coriander, ground turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  4. Pour in the diced tomatoes and fish or vegetable broth. Bring the mixture to a simmer.
  5. Gently add the seasoned fish fillets to the pot, spooning some of the tomato mixture over the top of each fillet.
