Ingredients

  • 4 fish fillets
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 1 can (400g) diced tomatoes
  • 1 cup coconut milk
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Season the fish fillets with salt and pepper.
  2. In a large pan, heat the vegetable oil over medium heat.
  3. Add the chopped onion and cook until softened.
  4. Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  5. Pour in the diced tomatoes and coconut milk. Stir to combine.
  6. Gently place the seasoned fish fillets into the pan, spooning some of the sauce over the top.
  7. Cover and simmer for 15-20 minutes, or until the fish is cooked through.
  8. Adjust seasoning with salt and pepper if needed.
  9. Garnish with fresh cilantro before serving.
