Ingredients

  • 1 kg fish fillets
  • 2 onions, finely chopped
  • 3 tomatoes, blended
  • 1 can (400ml) coconut milk
  • 2 tablespoons vegetable oil
  • 2 teaspoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • Salt to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pan, heat the vegetable oil over medium heat.
  2. Add the chopped onions and sauté until they are soft and translucent.
  3. Stir in the curry powder, turmeric, and paprika, and cook for 1-2 minutes to release the flavors.
  4. Add the blended tomatoes and cook for 5 minutes, stirring occasionally.
  5. Pour in the coconut milk and bring the mixture to a gentle simmer.
  6. Add the fish fillets to the pan and let them cook in the stew for 10-15 minutes, or until they are fully cooked.
  7. Season with salt to taste and garnish with chopped cilantro before serving.
