Ingredients

  • 4 whole tilapia fish, cleaned and scaled
  • 1 cup coconut milk
  • 2 tomatoes, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • Salt to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Clean the tilapia fish and make diagonal cuts on both sides.
  2. In a bowl, mix coconut milk, garlic, ginger, turmeric, paprika, and salt to make the marinade.
  3. Place the fish in a shallow dish and pour the marinade over it. Ensure the marinade gets into the cuts.
  4. Add the sliced tomatoes and onions on top of the fish. Marinate for 15 minutes.
  5. Preheat the grill to medium-high heat. Brush the grill grates with oil to prevent sticking.
  6. Place the marinated fish on the grill and cook for about 10-12 minutes on each side, or until the fish is cooked through and has a nice char.
  7. While grilling, baste the fish with the remaining marinade to keep it moist and flavorful.
  8. Once done, remove the fish from the grill and serve hot with your favorite side dishes.
