Samaki Wa Kupaka (tanzanian Grilled Tilapia)
Samaki wa Kupaka, or Tanzanian Grilled Tilapia, is a popular dish in Tanzanian cuisine. This flavorful and aromatic grilled fish is marinated in a rich coconut sauce, making it a delightful and satisfying meal.
Ingredients
- 4 whole tilapia fish, cleaned and scaled
- 1 cup coconut milk
- 2 tomatoes, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon turmeric
- 1 teaspoon paprika
- Salt to taste
- 2 tablespoons vegetable oil
Instructions
- Clean the tilapia fish and make diagonal cuts on both sides.
- In a bowl, mix coconut milk, garlic, ginger, turmeric, paprika, and salt to make the marinade.
- Place the fish in a shallow dish and pour the marinade over it. Ensure the marinade gets into the cuts.
- Add the sliced tomatoes and onions on top of the fish. Marinate for 15 minutes.
- Preheat the grill to medium-high heat. Brush the grill grates with oil to prevent sticking.
- Place the marinated fish on the grill and cook for about 10-12 minutes on each side, or until the fish is cooked through and has a nice char.
- While grilling, baste the fish with the remaining marinade to keep it moist and flavorful.
- Once done, remove the fish from the grill and serve hot with your favorite side dishes.
