Ingredients

  • 1 lb (450g) fresh fish fillets
  • 1 can (14 oz) coconut milk
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp chili powder
  • Salt to taste
  • 2 tbsp vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pan, heat the vegetable oil over medium heat.
  2. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  3. Add the chopped tomatoes and cook until they are soft and pulpy.
  4. Stir in the turmeric, cumin, coriander, and chili powder. Cook for 1-2 minutes to toast the spices.
  5. Pour in the coconut milk and bring the mixture to a gentle simmer.
  6. Add the fish fillets to the pan and gently simmer for 10-15 minutes, or until the fish is cooked through.
  7. Season with salt to taste.
  8. Garnish with fresh cilantro and serve hot with steamed rice or chapati.
