Ingredients

  • 10 red chilies, seeded and chopped
  • 5 shallots, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon shrimp paste (belacan)
  • 2 tablespoons palm sugar
  • 1 tablespoon tamarind paste
  • Salt to taste

Instructions

  1. In a pan, dry roast the shrimp paste until fragrant. Let it cool, then grind into a fine powder.
  2. In a blender, combine the red chilies, shallots, garlic, palm sugar, tamarind paste, and salt. Blend until smooth.
  3. Transfer the mixture to a pan and cook over low heat, stirring constantly, until the sambal thickens.
  4. Add the ground shrimp paste to the sambal and mix well. Cook for another 2-3 minutes.
  5. Remove from heat and let the sambal cool before serving.
