Ingredients
- 10 red chilies, seeded and chopped
- 5 shallots, chopped
- 3 cloves garlic, minced
- 1 tablespoon shrimp paste (belacan)
- 2 tablespoons palm sugar
- 1 tablespoon tamarind paste
- Salt to taste
Instructions
- In a pan, dry roast the shrimp paste until fragrant. Let it cool, then grind into a fine powder.
- In a blender, combine the red chilies, shallots, garlic, palm sugar, tamarind paste, and salt. Blend until smooth.
- Transfer the mixture to a pan and cook over low heat, stirring constantly, until the sambal thickens.
- Add the ground shrimp paste to the sambal and mix well. Cook for another 2-3 minutes.
- Remove from heat and let the sambal cool before serving.
