Ingredients
- 1 lb chicken breast, thinly sliced
- 2 cups green beans, cut into 2-inch pieces
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 3 red chilies, finely chopped
- 2 tomatoes, diced
- 1/4 cup coconut milk
- 2 tablespoons vegetable oil
- 1 teaspoon tamarind paste
- 1 teaspoon sugar
- Salt to taste
Instructions
- Heat vegetable oil in a wok or large skillet over medium heat.
- Add minced garlic and chopped red chilies, and stir-fry for 1-2 minutes until fragrant.
- Add sliced chicken and cook until it turns white and is no longer pink in the middle.
- Add sliced onion and green beans, and continue stir-frying for 3-4 minutes until the vegetables are tender-crisp.
- Stir in diced tomatoes, tamarind paste, sugar, and salt. Cook for another 2-3 minutes.
- Pour in the coconut milk and cook for an additional 2-3 minutes until the sauce thickens.
- Remove from heat and serve the Acehnese Spicy Stir-Fry hot with steamed rice.
