Sambal Goreng Aceh (Acehnese Spicy Stir-Fry)

Ingredients

  • 1 lb chicken breast, thinly sliced
  • 2 cups green beans, cut into 2-inch pieces
  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 3 red chilies, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup coconut milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon tamarind paste
  • 1 teaspoon sugar
  • Salt to taste

Instructions

  1. Heat vegetable oil in a wok or large skillet over medium heat.
  2. Add minced garlic and chopped red chilies, and stir-fry for 1-2 minutes until fragrant.
  3. Add sliced chicken and cook until it turns white and is no longer pink in the middle.
  4. Add sliced onion and green beans, and continue stir-frying for 3-4 minutes until the vegetables are tender-crisp.
  5. Stir in diced tomatoes, tamarind paste, sugar, and salt. Cook for another 2-3 minutes.
  6. Pour in the coconut milk and cook for an additional 2-3 minutes until the sauce thickens.
  7. Remove from heat and serve the Acehnese Spicy Stir-Fry hot with steamed rice.
