Javanese Spicy Stir-Fry (Sambal Goreng Jawa) is a traditional dish from Peranakan Cuisine that is known for its bold flavors and spicy kick. This dish is a perfect combination of tender vegetables, aromatic spices, and a fiery sambal sauce, creating a mouthwatering stir-fry that will leave you craving for more.
Ingredients
- 1 lb (450g) chicken breast, thinly sliced
- 2 cups (300g) green beans, cut into 2-inch pieces
- 1 large carrot, julienned
- 1 red bell pepper, sliced
- 3 shallots, finely chopped
- 4 cloves garlic, minced
- 3 red chilies, finely chopped
- 2 tomatoes, diced
- 1 lemongrass stalk, bruised
- 3 kaffir lime leaves
- 1/2 cup (120ml) coconut milk
- 2 tablespoons tamarind paste
- 2 tablespoons vegetable oil
- Salt and sugar to taste
Instructions
- In a large wok or skillet, heat the vegetable oil over medium heat. Add the shallots, garlic, and red chilies. Sauté until fragrant.
- Add the chicken slices and cook until they are no longer pink.
- Toss in the green beans, carrots, and red bell pepper. Stir-fry for a few minutes until the vegetables are slightly tender.
- Stir in the diced tomatoes, lemongrass, and kaffir lime leaves. Cook for another 2-3 minutes.
- Pour in the coconut milk and tamarind paste. Season with salt and sugar to taste. Simmer for 5-7 minutes until the sauce thickens.
- Remove the lemongrass and kaffir lime leaves before serving.
