Sambal Goreng Jawa (Javanese Spicy Stir-Fry)

Ingredients

  • 1 lb (450g) chicken breast, thinly sliced
  • 2 cups (300g) green beans, cut into 2-inch pieces
  • 1 large carrot, julienned
  • 1 red bell pepper, sliced
  • 3 shallots, finely chopped
  • 4 cloves garlic, minced
  • 3 red chilies, finely chopped
  • 2 tomatoes, diced
  • 1 lemongrass stalk, bruised
  • 3 kaffir lime leaves
  • 1/2 cup (120ml) coconut milk
  • 2 tablespoons tamarind paste
  • 2 tablespoons vegetable oil
  • Salt and sugar to taste

Instructions

  1. In a large wok or skillet, heat the vegetable oil over medium heat. Add the shallots, garlic, and red chilies. Sauté until fragrant.
  2. Add the chicken slices and cook until they are no longer pink.
  3. Toss in the green beans, carrots, and red bell pepper. Stir-fry for a few minutes until the vegetables are slightly tender.
  4. Stir in the diced tomatoes, lemongrass, and kaffir lime leaves. Cook for another 2-3 minutes.
  5. Pour in the coconut milk and tamarind paste. Season with salt and sugar to taste. Simmer for 5-7 minutes until the sauce thickens.
  6. Remove the lemongrass and kaffir lime leaves before serving.
