Ingredients

  • 2 bay leaves
  • 200ml coconut milk
  • 1 tsp tamarind paste
  • 1 tsp sugar
  • Salt to taste

Instructions

  1. In a pan, sauté the shallots, garlic, and red chilies until fragrant.
  2. Add the tomatoes, lemongrass, and bay leaves. Cook until the tomatoes are soft.
  3. Pour in the coconut milk and tamarind paste. Stir well.
  4. Add the boiled jengkol and sugar. Season with salt to taste.
  5. Simmer for 15-20 minutes until the sauce thickens.
