Spicy Stir-Fry (Sambal Goreng) is a classic Peranakan dish known for its bold flavors and fiery kick. This dish is a perfect combination of spicy, sweet, and savory, making it a favorite among those who love a little heat in their meals.
Ingredients
- 1 lb chicken breast, thinly sliced
- 2 cups green beans, trimmed and cut into 2-inch pieces
- 1 red bell pepper, sliced
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons sambal oelek (chili paste)
- 2 tablespoons kecap manis (sweet soy sauce)
- 1 tablespoon tamarind paste
- 1 teaspoon shrimp paste
- 1 teaspoon sugar
- 1/2 cup water
- Salt to taste
- Oil for cooking
Instructions
- In a small bowl, mix sambal oelek, kecap manis, tamarind paste, shrimp paste, and sugar. Set aside.
- Heat oil in a wok or large skillet over high heat. Add the chicken and stir-fry until cooked through. Remove from the wok and set aside.
- In the same wok, add a little more oil if needed. Sauté the garlic until fragrant, then add the onion and cook until softened.
- Add the green beans and bell pepper to the wok. Stir-fry for a few minutes until the vegetables are tender-crisp.
- Return the cooked chicken to the wok. Pour in the sambal mixture and water. Stir well to combine all the ingredients.
- Let the dish simmer for a few minutes until the sauce thickens and coats the ingredients. Season with salt to taste.
- Serve the spicy stir-fry hot with steamed rice.
