Ingredients
- 4 shallots, thinly sliced
- 3-4 red chili peppers, thinly sliced

- 3 kaffir lime leaves, finely chopped
- 1 tsp shrimp paste
- 1 tsp salt
- 1 tsp sugar
- 2 tbsp lime juice
Instructions
- In a bowl, combine the shallots, red chili peppers, bird's eye chili peppers, lemongrass, and kaffir lime leaves.
- Add the shrimp paste, salt, sugar, and lime juice. Mix well.
- Let the sambal matah sit for 5 minutes to allow the flavors to meld together.
- Use as a condiment for grilled meats, steamed vegetables, or rice dishes.
