Ingredients

  • 4 shallots, thinly sliced
  • 3-4 red chili peppers, thinly sliced
  • 2-3 bird's eye chili peppers, thinly sliced
  • 2 lemongrass stalks, thinly sliced
  • 3 kaffir lime leaves, finely chopped
  • 1 tsp shrimp paste
  • 1 tsp salt
  • 1 tsp sugar
  • 2 tbsp lime juice

Instructions

  1. In a bowl, combine the shallots, red chili peppers, bird's eye chili peppers, lemongrass, and kaffir lime leaves.
  2. Add the shrimp paste, salt, sugar, and lime juice. Mix well.
  3. Let the sambal matah sit for 5 minutes to allow the flavors to meld together.
  4. Use as a condiment for grilled meats, steamed vegetables, or rice dishes.
