Sambal Stingray Sensation

Ingredients

  • 500g stingray fillet
  • 4 tbsp sambal paste
  • 2 tbsp tamarind juice
  • 4 kaffir lime leaves, thinly sliced
  • 4 shallots, thinly sliced
  • 4 cloves garlic, minced
  • 1 inch ginger, julienned
  • 2 stalks lemongrass, crushed
  • 1/4 cup coconut milk
  • Salt to taste

Instructions

  1. Preheat the grill to medium heat.
  2. Place the stingray fillet on the grill and cook for 5-6 minutes on each side, or until cooked through.
  3. In a small bowl, mix the sambal paste, tamarind juice, kaffir lime leaves, shallots, garlic, ginger, lemongrass, and coconut milk.
  4. Spread the sambal mixture over the grilled stingray and continue grilling for another 2-3 minutes.
  5. Season with salt to taste and serve hot.
