Sambal Stingray Sensation

Ingredients
- 500g stingray fillet
- 4 tbsp sambal paste
- 2 tbsp tamarind juice
- 4 kaffir lime leaves, thinly sliced
- 4 shallots, thinly sliced
- 4 cloves garlic, minced
- 1 inch ginger, julienned
- 2 stalks lemongrass, crushed
- 1/4 cup coconut milk
- Salt to taste
Instructions
- Preheat the grill to medium heat.
- Place the stingray fillet on the grill and cook for 5-6 minutes on each side, or until cooked through.
- In a small bowl, mix the sambal paste, tamarind juice, kaffir lime leaves, shallots, garlic, ginger, lemongrass, and coconut milk.
- Spread the sambal mixture over the grilled stingray and continue grilling for another 2-3 minutes.
- Season with salt to taste and serve hot.
