Sambal Stingray Spectacle

Ingredients
- 500g stingray wings
- 4 tbsp sambal chili paste
- 2 tbsp tamarind juice
- 1 tbsp sugar
- 1 tsp salt
- 4 kaffir lime leaves, finely sliced
- 4 pieces banana leaves, for wrapping
Instructions
- Prepare the sambal sauce by mixing sambal chili paste, tamarind juice, sugar, salt, and kaffir lime leaves in a bowl.
- Place the stingray wings on individual pieces of banana leaves and spread the sambal sauce evenly over the fish.
- Wrap the stingray wings securely in the banana leaves and grill over medium heat for 10-12 minutes on each side, or until the fish is cooked through.
- Unwrap the banana leaves and transfer the stingray wings to a serving platter.
- Serve hot with steamed rice and enjoy!
