Sambal Stingray Spectacle

Ingredients

  • 500g stingray wings
  • 4 tbsp sambal chili paste
  • 2 tbsp tamarind juice
  • 1 tbsp sugar
  • 1 tsp salt
  • 4 kaffir lime leaves, finely sliced
  • 4 pieces banana leaves, for wrapping

Instructions

  1. Prepare the sambal sauce by mixing sambal chili paste, tamarind juice, sugar, salt, and kaffir lime leaves in a bowl.
  2. Place the stingray wings on individual pieces of banana leaves and spread the sambal sauce evenly over the fish.
  3. Wrap the stingray wings securely in the banana leaves and grill over medium heat for 10-12 minutes on each side, or until the fish is cooked through.
  4. Unwrap the banana leaves and transfer the stingray wings to a serving platter.
  5. Serve hot with steamed rice and enjoy!
