Sambal Tumis (Stir-Fried Chili Paste)
Stir-Fried Chili Paste (Sambal Tumis) is a classic Peranakan dish that is known for its spicy and aromatic flavors. It is a versatile condiment that can be used as a base for many Peranakan dishes or as a spicy dip for snacks.
Ingredients
- 10 dried red chilies, soaked in hot water and deseeded
- 5 shallots, peeled
- 3 cloves garlic, peeled
- 1 inch fresh turmeric, peeled
- 2 tablespoons tamarind paste
- 2 tablespoons palm sugar
- 1 teaspoon salt
- 3 tablespoons cooking oil
Instructions
- Grind the soaked and deseeded dried red chilies, shallots, garlic, and fresh turmeric into a smooth paste using a food processor or mortar and pestle.
- Heat the cooking oil in a pan over medium heat.
- Add the ground paste and stir-fry until fragrant, about 10-15 minutes.
- Add tamarind paste, palm sugar, and salt. Stir well and continue to cook for another 5 minutes.
- Remove from heat and let the sambal tumis cool before transferring it to a clean, dry jar.
