Sambar (creamy Lentil And Vegetable Stew)
Sambar is a traditional South Indian dish that is a creamy lentil and vegetable stew. It is a flavorful and nutritious dish that is perfect for a comforting meal.
Ingredients
- 1 cup Toor dal (split pigeon peas)
- 2 cups mixed vegetables (such as drumsticks, carrots, eggplant, and okra)
- 1 onion, chopped
- 2 tomatoes, chopped
- 1/2 teaspoon turmeric powder
- 1 tablespoon sambar powder
- 1 teaspoon tamarind paste
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 2-3 dried red chilies
- A few curry leaves
- Salt to taste
Instructions
- Wash the toor dal and pressure cook with 3 cups of water, turmeric powder, and a little oil until soft.
- Cook the mixed vegetables in a separate pot until tender.
- Add the cooked vegetables to the dal and mix well.
- In a pan, heat oil and add mustard seeds, cumin seeds, dried red chilies, and curry leaves. Sauté until the seeds crackle.
- Add chopped onions and sauté until they turn translucent.
- Add chopped tomatoes and cook until they turn mushy.
- Add sambar powder, tamarind paste, and salt. Cook for a few minutes.
- Add this mixture to the dal and vegetable mixture. Simmer for 10 minutes.
- Garnish with fresh coriander leaves.
