Ingredients

  • 1 cup Toor dal (split pigeon peas)
  • 2 cups mixed vegetables (such as drumsticks, carrots, eggplant, and okra)
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon sambar powder
  • 1 teaspoon tamarind paste
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2-3 dried red chilies
  • A few curry leaves
  • Salt to taste

Instructions

  1. Wash the toor dal and pressure cook with 3 cups of water, turmeric powder, and a little oil until soft.
  2. Cook the mixed vegetables in a separate pot until tender.
  3. Add the cooked vegetables to the dal and mix well.
  4. In a pan, heat oil and add mustard seeds, cumin seeds, dried red chilies, and curry leaves. Sauté until the seeds crackle.
  5. Add chopped onions and sauté until they turn translucent.
  6. Add chopped tomatoes and cook until they turn mushy.
  7. Add sambar powder, tamarind paste, and salt. Cook for a few minutes.
  8. Add this mixture to the dal and vegetable mixture. Simmer for 10 minutes.
  9. Garnish with fresh coriander leaves.
