  • 1 pound fresh spinach, chopped
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon ground sumac
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 package of pre-made pastry dough

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent.
  2. Add the chopped spinach to the skillet and cook until wilted. Season with sumac, cumin, salt, and pepper. Remove from heat and let the mixture cool.
  3. Preheat the oven to 375°F (190°C).
  4. Roll out the pastry dough and cut it into circles using a cookie cutter or a small bowl as a guide.
  5. Place a spoonful of the spinach mixture onto each circle of dough. Fold the dough over the filling to create a half-moon shape and crimp the edges with a fork to seal.
  6. Place the pies on a baking sheet and bake for 15-20 minutes, or until golden brown.
  7. Remove from the oven and let the pies cool slightly before serving.
