Sambusa (flaky Spinach Pastry)

Ingredients

  • 2 cups fresh spinach, chopped
  • 1 onion, finely chopped
  • 2 tablespoons vegetable oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 package of pre-made pastry dough

Instructions

  1. In a pan, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
  2. Add the chopped spinach to the pan and cook until wilted.
  3. Stir in the ground cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes, then remove from heat and let the mixture cool.
  4. Preheat the oven to 375°F (190°C).
  5. Roll out the pre-made pastry dough and cut it into 4-inch squares.
  6. Place a spoonful of the spinach mixture in the center of each square.
  7. Fold the pastry dough over the filling to form a triangle, then press the edges to seal.
  8. Place the sambusas on a baking sheet and bake for 15-20 minutes, or until golden brown.
  9. Remove from the oven and let cool slightly before serving.
