Samgyetang Ginseng Chicken Soup (삼계탕)
삼계탕 (Samgyetang) is a traditional Korean ginseng chicken soup that is often enjoyed during the hot summer months to help boost energy and stamina. This nutritious and flavorful soup is filled with tender chicken, sticky rice, and a variety of medicinal herbs, making it a popular dish in Korean cuisine.
Ingredients
- 1 whole chicken (about 3-4 lbs), cleaned and innards removed
- 1 cup sweet rice (sticky rice)
- 8-10 garlic cloves, peeled
- 8-10 dried jujubes (Korean red dates)
- 8-10 ginseng roots
- 8-10 chestnuts, peeled (optional)
- Salt and pepper to taste
- Green onions and sesame seeds for garnish
- Water
Instructions
- Stuff the cavity of the chicken with sweet rice, garlic, jujubes, ginseng roots, and chestnuts if using. Season the outside of the chicken with salt and pepper.
- In a large pot, place the stuffed chicken and add enough water to cover the chicken completely.
- Bring the water to a boil, then reduce the heat to a simmer. Cover and cook for about 1 hour, or until the chicken is fully cooked and tender.
- Once the chicken is cooked, remove it from the pot and let it rest for a few minutes before slicing it into serving pieces.
- Return the sliced chicken back to the pot with the broth. Taste and adjust the seasoning if needed.
- Serve the Samgyetang hot, garnished with chopped green onions and sesame seeds.
