Sápmi, also known as Sami Cloud Bread, is a traditional bread from the Yamal Cuisine of the Sami people in the Arctic region. This light and fluffy bread is perfect for accompanying hearty stews or enjoying with a spread of butter and jam.

Ingredients

  • 3 eggs, separated
  • 3 tablespoons cream cheese
  • 1/4 teaspoon cream of tartar
  • 1 tablespoon honey (optional)

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the egg whites and cream of tartar until stiff peaks form.
  3. In a separate bowl, mix the egg yolks and cream cheese until smooth. If desired, add honey for a touch of sweetness.
  4. Gently fold the egg yolk mixture into the egg whites until fully combined.
  5. Spoon the mixture onto the prepared baking sheet, forming 6 cloud-shaped mounds.
  6. Bake for 25 minutes or until the cloud bread is golden on the outside.
  7. Allow the cloud bread to cool before serving.
