Samlor Kari (coconut Curry Chicken)
Samlor Kari, also known as Coconut Curry Chicken, is a popular dish in Cambodian cuisine. This flavorful and aromatic curry is made with tender chicken, potatoes, and a rich coconut milk base, infused with a blend of traditional Cambodian spices.
Ingredients
- 1.5 lbs chicken, cut into pieces
- 2 potatoes, peeled and cubed
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 can (14 oz) coconut milk
- 2 tbsp fish sauce
- 2 tbsp red curry paste
- 1 tbsp brown sugar
- 1 cup chicken broth
- 1 red bell pepper, sliced
- 1 cup green beans, trimmed
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the garlic and onion, and sauté until fragrant.
- Add the chicken pieces to the pot and cook until browned on all sides.
- Stir in the red curry paste and brown sugar, then pour in the coconut milk and chicken broth. Bring to a simmer.
- Add the potatoes, bell pepper, and green beans to the pot. Season with fish sauce, salt, and pepper. Cover and simmer for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
- Adjust seasoning to taste and serve the Samlor Kari hot with steamed rice.
