Samlor Kari (coconut Curry Chicken)

Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 2 potatoes, peeled and cubed
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 can (14 oz) coconut milk
  • 2 tbsp fish sauce
  • 2 tbsp red curry paste
  • 1 tbsp brown sugar
  • 1 cup chicken broth
  • 1 red bell pepper, sliced
  • 1 cup green beans, trimmed
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the garlic and onion, and sauté until fragrant.
  2. Add the chicken pieces to the pot and cook until browned on all sides.
  3. Stir in the red curry paste and brown sugar, then pour in the coconut milk and chicken broth. Bring to a simmer.
  4. Add the potatoes, bell pepper, and green beans to the pot. Season with fish sauce, salt, and pepper. Cover and simmer for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  5. Adjust seasoning to taste and serve the Samlor Kari hot with steamed rice.
