Ingredients
- 1 small pumpkin, peeled and cubed
- 1 can of coconut milk
- 2 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red chili, sliced
- 1 tbsp curry powder
- 1 tbsp fish sauce
- 1 tbsp sugar
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté the onion, garlic, and red chili until fragrant.
- Add the curry powder and stir for a minute to release the flavors.
- Add the pumpkin, coconut milk, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes or until the pumpkin is tender.
- Stir in the fish sauce, sugar, and salt to taste.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.
