Samlor Kari Dang, also known as Pumpkin Coconut Curry, is a traditional Cambodian dish that combines the sweetness of pumpkin with the rich flavors of coconut milk and aromatic spices. This hearty and comforting curry is perfect for a cozy family meal or special gatherings.
Ingredients
- 2 cups diced pumpkin
- 1 can (14 oz) coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup vegetable broth
- 2 tablespoons red curry paste
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the red curry paste, turmeric, cumin, and coriander to the pot, and stir to combine with the onion and garlic.
- Pour in the coconut milk and vegetable broth, and stir well. Bring the mixture to a gentle simmer.
- Add the diced pumpkin and sliced red bell pepper to the pot. Season with soy sauce, brown sugar, salt, and pepper. Stir to combine all the ingredients.
- Cover the pot and let the curry simmer for about 20-25 minutes, or until the pumpkin is tender.
- Once the pumpkin is cooked through, taste the curry and adjust the seasoning if needed.
- Serve the Samlor Kari Dang hot with steamed rice or crusty bread.
