Samlor Kari Dang (pumpkin Coconut Curry)

Ingredients

  • 2 cups diced pumpkin
  • 1 can (14 oz) coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup vegetable broth
  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
  2. Add the red curry paste, turmeric, cumin, and coriander to the pot, and stir to combine with the onion and garlic.
  3. Pour in the coconut milk and vegetable broth, and stir well. Bring the mixture to a gentle simmer.
  4. Add the diced pumpkin and sliced red bell pepper to the pot. Season with soy sauce, brown sugar, salt, and pepper. Stir to combine all the ingredients.
  5. Cover the pot and let the curry simmer for about 20-25 minutes, or until the pumpkin is tender.
  6. Once the pumpkin is cooked through, taste the curry and adjust the seasoning if needed.
  7. Serve the Samlor Kari Dang hot with steamed rice or crusty bread.
