  • 2 cups coconut milk
  • 2 tablespoons yellow curry paste
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 4 cups chicken broth
  • 2 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the yellow curry paste and cook for 1-2 minutes until fragrant.
  2. Add the chicken pieces and cook until browned on all sides.
  3. Add the potatoes, onion, carrot, and green beans to the pot. Stir to combine with the chicken and curry paste.
