Ingredients
- 1 lb chicken, cut into bite-sized pieces
- 2 potatoes, peeled and diced
- 1 onion, sliced
- 1 carrot, sliced
- 1 cup green beans, trimmed
- 2 cups coconut milk
- 2 tablespoons yellow curry paste
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 1 teaspoon turmeric
- 1 teaspoon salt
- 4 cups chicken broth
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the yellow curry paste and cook for 1-2 minutes until fragrant.
- Add the chicken pieces and cook until browned on all sides.
- Add the potatoes, onion, carrot, and green beans to the pot. Stir to combine with the chicken and curry paste.
- Pour in the coconut milk and chicken broth. Add the fish sauce, sugar, turmeric, and salt. Stir well and bring to a simmer.
- Cover the pot and let the curry simmer for 30 minutes, or until the chicken is cooked through and the vegetables are tender.
