Samlor Ko Kor is a traditional Cambodian beef soup that is flavorful and comforting. It is a popular dish in Cambodian cuisine and is often enjoyed with rice.
Ingredients
- 1 lb beef, thinly sliced
- 2 cloves garlic, minced
- 1 onion, sliced
- 2 tomatoes, diced
- 2 cups beef broth
- 2 cups water
- 1 lemongrass stalk, bruised
- 2 tbsp fish sauce
- 1 tbsp sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups mixed vegetables (carrots, green beans, cabbage)
- Fresh cilantro for garnish
Instructions
- In a pot, heat some oil over medium heat and sauté the garlic and onion until fragrant.
- Add the beef and cook until browned.
- Stir in the tomatoes, beef broth, water, lemongrass, fish sauce, sugar, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add the mixed vegetables and continue to simmer for another 15-20 minutes until the vegetables are tender.
- Remove the lemongrass stalk and discard.
- Adjust seasoning if needed and serve the soup hot, garnished with fresh cilantro.
