Ingredients
- 500g prawns, peeled and deveined
- 2 cups tamarind juice
- 4 cups water
- 1 onion, sliced
- 2 tomatoes, cut into wedges
- 2 stalks lemongrass, smashed
- 4-5 kaffir lime leaves
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 red chili, sliced
- Handful of fresh basil leaves
Instructions
- In a pot, bring the tamarind juice and water to a boil.
- Add the onion, tomatoes, lemongrass, and kaffir lime leaves. Simmer for 10 minutes.
- Stir in the fish sauce, sugar, and salt.
- Add the prawns and cook until they turn pink and opaque.
- Garnish with sliced red chili and fresh basil leaves before serving.
