Ingredients

  • 500g prawns, peeled and deveined
  • 2 cups tamarind juice
  • 4 cups water
  • 1 onion, sliced
  • 2 tomatoes, cut into wedges
  • 2 stalks lemongrass, smashed
  • 4-5 kaffir lime leaves
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 red chili, sliced
  • Handful of fresh basil leaves

Instructions

  1. In a pot, bring the tamarind juice and water to a boil.
  2. Add the onion, tomatoes, lemongrass, and kaffir lime leaves. Simmer for 10 minutes.
  3. Stir in the fish sauce, sugar, and salt.
  4. Add the prawns and cook until they turn pink and opaque.
  5. Garnish with sliced red chili and fresh basil leaves before serving.
