Ingredients

  • 1 lb white fish fillets, cut into chunks
  • 4 cups fish or vegetable stock
  • 1 lemongrass stalk, bruised and chopped
  • 2 cloves garlic, minced
  • 1 onion, sliced
  • 1 tomato, cut into wedges
  • 1 cup sliced mushrooms
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 1 tsp tamarind paste
  • 1 red chili, sliced
  • 1 cup fresh basil leaves
  • 1 cup bean sprouts
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the stock to a boil.
  2. Add lemongrass, garlic, onion, tomato, and mushrooms. Simmer for 10 minutes.
  3. Stir in fish sauce, sugar, tamarind paste, and chili. Cook for another 5 minutes.
  4. Add fish fillets and cook until they are opaque and cooked through, about 5-7 minutes.
  5. Stir in basil leaves and bean sprouts. Season with salt and pepper.
  6. Serve hot and enjoy!
