Ingredients
- 4 fillets of white fish (such as cod or tilapia)
- 2 cups of coconut milk
- 1 onion, sliced
- 2 tomatoes, diced
- 2 stalks of lemongrass, bruised
- 3 cloves of garlic, minced
- 1 tablespoon of fish sauce
- 1 tablespoon of tamarind paste
- 1 teaspoon of sugar
- 4 cups of water
- Salt and pepper to taste
Instructions
- In a large pot, heat the coconut milk over medium heat.
- Add the sliced onion, diced tomatoes, lemongrass, and minced garlic. Cook until the onions are translucent.
- Add the fish fillets, fish sauce, tamarind paste, sugar, and water. Bring to a simmer and cook for 20-25 minutes, or until the fish is cooked through.
