Ingredients

  • 1 lb white fish fillets, cut into chunks
  • 2 cups coconut milk
  • 2 cups chicken or vegetable broth
  • 1 onion, sliced
  • 2 tomatoes, diced
  • 1 eggplant, cut into chunks
  • 1 cup green beans, trimmed
  • 2 tbsp fish sauce
  • 2 tbsp red curry paste
  • 1 tbsp palm sugar or brown sugar
  • 1 tbsp tamarind paste
  • 1 stalk lemongrass, bruised
  • 4-5 kaffir lime leaves
  • 1 red chili, sliced (optional for extra heat)
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the coconut milk and red curry paste over medium heat. Stir until the curry paste is fully dissolved into the coconut milk.
  2. Add the onion, eggplant, and lemongrass to the pot. Cook for 5 minutes, stirring occasionally.
  3. Pour in the chicken or vegetable broth and bring the mixture to a gentle boil.
  4. Add the fish sauce, palm sugar, tamarind paste, kaffir lime leaves, and optional red chili. Stir well to combine.
  5. Gently add the fish chunks and tomatoes to the pot. Simmer for 10-15 minutes until the fish is cooked through.
  6. Add the green beans to the pot and cook for an additional 5 minutes until the beans are tender.
  7. Remove the lemongrass stalk and kaffir lime leaves from the curry. Discard them.
  8. Serve the Samlor Trey Kari hot, garnished with fresh cilantro. Enjoy with steamed rice or crusty bread.
