Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup butter, melted
- 2 ripe bananas, sliced
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 cups milk
- 3 egg yolks, beaten
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 tablespoons powdered sugar
Instructions
- In a bowl, mix graham cracker crumbs, 1/3 cup sugar, and melted butter. Press into a 9-inch pie dish to form the crust.
- Arrange the sliced bananas over the crust.
- In a saucepan, combine 1/2 cup sugar, cornstarch, and salt. Gradually stir in milk. Cook and stir over medium heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer.
- Remove from heat. Gradually stir about 1 cup of the hot mixture into the beaten egg yolks, then return all to the saucepan. Bring to a gentle boil; cook and stir 2 minutes longer.
- Remove from heat. Gently stir in butter and vanilla extract. Cool for a few minutes, then pour the filling over the bananas in the pie dish.
- Refrigerate for at least 2 hours, or until set.
- In a mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form. Spread over the pie before serving.
