Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup butter, melted
  • 2 ripe bananas, sliced

  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 cups milk
  • 3 egg yolks, beaten
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. In a bowl, mix graham cracker crumbs, 1/3 cup sugar, and melted butter. Press into a 9-inch pie dish to form the crust.
  2. Arrange the sliced bananas over the crust.
  3. In a saucepan, combine 1/2 cup sugar, cornstarch, and salt. Gradually stir in milk. Cook and stir over medium heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer.
  4. Remove from heat. Gradually stir about 1 cup of the hot mixture into the beaten egg yolks, then return all to the saucepan. Bring to a gentle boil; cook and stir 2 minutes longer.
  5. Remove from heat. Gently stir in butter and vanilla extract. Cool for a few minutes, then pour the filling over the bananas in the pie dish.
  6. Refrigerate for at least 2 hours, or until set.
  7. In a mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form. Spread over the pie before serving.
