Samoan Crab Cakes With Mango Salsa

Ingredients

  • 1 lb fresh crab meat
  • 1/2 cup bread crumbs
  • 1/4 cup mayonnaise
  • 1 egg
  • 1/4 cup chopped green onions
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped cilantro
  • 1 tsp Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 mangos, diced
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeno, seeded and minced
  • 2 tbsp lime juice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large bowl, combine the crab meat, bread crumbs, mayonnaise, egg, green onions, red bell pepper, cilantro, Worcestershire sauce, garlic powder, salt, and black pepper. Mix until well combined.
  2. Form the mixture into 8 crab cakes and place them on a baking sheet lined with parchment paper. Refrigerate for 15 minutes.
  3. While the crab cakes are chilling, prepare the mango salsa. In a bowl, combine the diced mango, red onion, cilantro, jalapeno, lime juice, salt, and black pepper. Mix well and refrigerate until ready to serve.
  4. Heat a large skillet over medium heat and add a drizzle of oil. Cook the crab cakes for 3-4 minutes on each side, until golden brown and heated through.
  5. Serve the crab cakes with the mango salsa on top.
