Samoan Pulled Pork Tacos
Samoan Pulled Pork Tacos are a delicious fusion of Samoan and Mexican flavors, featuring tender pulled pork with a tropical twist. This recipe is perfect for a flavorful and unique taco night!
Ingredients
- 3 lbs pork shoulder, trimmed and cut into chunks
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1 tbsp minced garlic
- 1 tbsp grated fresh ginger
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp black pepper
- 12 small flour or corn tortillas
- 1 cup shredded cabbage
- 1/2 cup chopped fresh cilantro
- 1/2 cup diced pineapple
- Lime wedges, for serving
Instructions
- In a slow cooker, combine the pork shoulder, pineapple juice, soy sauce, brown sugar, garlic, ginger, cumin, coriander, cinnamon, and black pepper. Stir to combine.
- Cover and cook on low for 8 hours or high for 4 hours, until the pork is very tender and easy to shred with a fork.
- Remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and stir to coat it in the cooking liquid.
- Warm the tortillas according to package instructions.
- Assemble the tacos by placing a portion of the pulled pork on each tortilla, then topping with shredded cabbage, chopped cilantro, diced pineapple, and a squeeze of fresh lime juice.
