Samoan Pulled Pork Tacos

Ingredients

  • 3 lbs pork shoulder, trimmed and cut into chunks
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tbsp minced garlic
  • 1 tbsp grated fresh ginger
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp black pepper
  • 12 small flour or corn tortillas
  • 1 cup shredded cabbage
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup diced pineapple
  • Lime wedges, for serving

Instructions

  1. In a slow cooker, combine the pork shoulder, pineapple juice, soy sauce, brown sugar, garlic, ginger, cumin, coriander, cinnamon, and black pepper. Stir to combine.
  2. Cover and cook on low for 8 hours or high for 4 hours, until the pork is very tender and easy to shred with a fork.
  3. Remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and stir to coat it in the cooking liquid.
  4. Warm the tortillas according to package instructions.
  5. Assemble the tacos by placing a portion of the pulled pork on each tortilla, then topping with shredded cabbage, chopped cilantro, diced pineapple, and a squeeze of fresh lime juice.
