Ingredients

  • 1 lb mixed seafood (shrimp, fish, squid)
  • 2 tbsp coconut oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 can coconut milk
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the coconut oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until fragrant.
  3. Add the sliced red bell pepper and cook for a few minutes.
  4. Pour in the coconut milk and stir in the curry powder, turmeric, and paprika.
  5. Add the mixed seafood and simmer for 15-20 minutes, or until the seafood is cooked through.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh cilantro before serving.
