Samoan Seafood Curry
Samoan Seafood Curry is a delicious and flavorful dish that combines the richness of seafood with the aromatic spices of Oceanic cuisine.
Ingredients
- 1 lb mixed seafood (shrimp, fish, squid)
- 2 tbsp coconut oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 can coconut milk
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the coconut oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the sliced red bell pepper and cook for a few minutes.
- Pour in the coconut milk and stir in the curry powder, turmeric, and paprika.
- Add the mixed seafood and simmer for 15-20 minutes, or until the seafood is cooked through.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
