Samoan Style Shrimp Fried Rice

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 3 cups cooked white rice, chilled
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 eggs, beaten
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
  2. Add the shrimp and cook for 2-3 minutes until pink and opaque. Remove the shrimp from the wok and set aside.
  3. Heat the remaining tablespoon of vegetable oil in the wok. Add the minced garlic and grated ginger, and stir-fry for 1 minute.
  4. Add the mixed vegetables to the wok and stir-fry for 2-3 minutes until they are tender-crisp.
  5. Push the vegetables to the side of the wok and pour the beaten eggs into the empty space. Scramble the eggs until they are cooked through.
  6. Add the chilled cooked rice to the wok, breaking up any clumps, and stir-fry for 3-4 minutes.
  7. Return the cooked shrimp to the wok and pour the soy sauce over the rice. Stir-fry for an additional 2-3 minutes until everything is heated through.
  8. Season the fried rice with salt and pepper to taste. Serve hot and enjoy!
