Samosa Bharwa Portobello (samosa Stuffed Portobello Mushrooms)
Samosa Bharwa Portobello is a delightful fusion dish that combines the flavors of traditional East Indian samosas with the earthy richness of portobello mushrooms. This recipe is perfect for a unique appetizer or a flavorful side dish.
Ingredients
- 4 large portobello mushrooms
- 1 cup boiled and mashed potatoes
- 1/2 cup green peas
- 1 small onion, finely chopped
- 2 green chilies, finely chopped
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/4 cup chopped fresh coriander leaves
- Salt to taste
- 2 tbsp oil
Instructions
- Preheat the oven to 375°F (190°C).
- Remove the stems from the portobello mushrooms and gently scrape out the gills using a spoon.
- In a pan, heat 1 tbsp oil and add cumin seeds. Once they splutter, add the chopped onions and green chilies. Sauté until the onions turn translucent.
- Add ginger-garlic paste and sauté for a minute.
- Now add the mashed potatoes, green peas, coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix well and cook for 2-3 minutes.
- Turn off the heat and add chopped coriander leaves. Mix well and let the filling cool slightly.
- Stuff the portobello mushrooms with the prepared filling and place them on a baking tray.
- Drizzle the stuffed mushrooms with the remaining oil and bake for 20-25 minutes, or until the mushrooms are tender.
- Once done, remove from the oven and serve hot.
