Samosa (flaky Pumpkin Samsa)
Samosa, also known as Samsa, is a popular Uzbek pastry filled with savory ingredients. This recipe puts a unique twist on the traditional samosa by using flaky pumpkin as the main filling.
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup water
- 2 cups diced pumpkin
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon chili powder
- Salt to taste
- 2 tablespoons vegetable oil
Instructions
- In a large bowl, combine the flour and salt. Gradually add water and knead the dough until smooth. Cover and let it rest for 30 minutes.
- In a skillet, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until translucent.
- Add the diced pumpkin, ground cumin, ground coriander, chili powder, and salt. Cook until the pumpkin is tender. Remove from heat and let it cool.
- Preheat the oven to 375°F (190°C).
- Divide the dough into 12 equal portions. Roll each portion into a thin circle.
- Place a spoonful of the pumpkin filling in the center of each dough circle. Fold the dough over the filling to form a triangle, and press the edges to seal.
- Place the samosas on a baking sheet and bake for 20-25 minutes, or until golden brown.
- Serve the flaky pumpkin samosas hot with your favorite chutney or sauce.
