Samosa, also known as Siswati Samoosa, is a popular savory snack in Eswatini Cuisine. These crispy, triangular pastries are filled with a delicious mixture of spiced potatoes, peas, and sometimes meat, and are perfect for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup vegetable oil
  • 1 teaspoon salt
  • 1/2 cup water
  • 2 large potatoes, boiled and mashed
  • 1/2 cup peas
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder
  • Salt to taste
  • Oil for frying

Instructions

  1. In a large bowl, mix the flour, vegetable oil, and salt. Gradually add water and knead the dough until smooth. Cover and let it rest for 30 minutes.
  2. Heat 2 tablespoons of oil in a pan. Add cumin seeds and let them sizzle. Add the chopped onion and garlic, and sauté until golden brown.
  3. Add the peas, mashed potatoes, garam masala, turmeric, chili powder, and salt. Mix well and cook for 5 minutes. Remove from heat and let the filling cool.
  4. Divide the dough into 6 equal portions and roll each portion into a thin circle. Cut each circle in half to form semi-circles.
  5. Take one semi-circle, form a cone, and fill it with the potato mixture. Seal the edges using a little water to form a triangular pocket.
  6. Heat oil in a deep pan and fry the samosas until golden brown and crispy. Drain on paper towels.
  7. Serve hot with chutney or sauce of your choice.
