Samosa (siswati Samoosa)
Samosa, also known as Siswati Samoosa, is a popular savory snack in Eswatini Cuisine. These crispy, triangular pastries are filled with a delicious mixture of spiced potatoes, peas, and sometimes meat, and are perfect for any occasion.
Ingredients
- 2 cups all-purpose flour
- 1/4 cup vegetable oil
- 1 teaspoon salt
- 1/2 cup water
- 2 large potatoes, boiled and mashed
- 1/2 cup peas
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric
- 1/2 teaspoon chili powder
- Salt to taste
- Oil for frying
Instructions
- In a large bowl, mix the flour, vegetable oil, and salt. Gradually add water and knead the dough until smooth. Cover and let it rest for 30 minutes.
- Heat 2 tablespoons of oil in a pan. Add cumin seeds and let them sizzle. Add the chopped onion and garlic, and sauté until golden brown.
- Add the peas, mashed potatoes, garam masala, turmeric, chili powder, and salt. Mix well and cook for 5 minutes. Remove from heat and let the filling cool.
- Divide the dough into 6 equal portions and roll each portion into a thin circle. Cut each circle in half to form semi-circles.
- Take one semi-circle, form a cone, and fill it with the potato mixture. Seal the edges using a little water to form a triangular pocket.
- Heat oil in a deep pan and fry the samosas until golden brown and crispy. Drain on paper towels.
- Serve hot with chutney or sauce of your choice.
