Samosa, also known as Somali Sambusa, is a popular savory pastry in Somali cuisine. It is typically filled with spiced meat and vegetables, then deep-fried to golden perfection.

Ingredients

  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 potatoes, boiled and mashed
  • 1 cup frozen peas
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • Salt to taste
  • Pepper to taste
  • 12 sheets of phyllo dough
  • Vegetable oil for frying

Instructions

  1. In a pan, cook the ground beef and onion until the beef is browned and the onion is soft.
  2. Add the mashed potatoes, frozen peas, cumin, coriander, turmeric, salt, and pepper to the pan. Mix well and cook for 5 minutes. Remove from heat and let the filling cool.
  3. Take one sheet of phyllo dough and cut it into 3 strips. Place a spoonful of the filling at the end of each strip, then fold the dough over the filling to form a triangle. Continue folding until the entire strip is used, then seal the end with a little water.
  4. Heat the vegetable oil in a deep pan over medium heat. Fry the samosas in batches until they are golden brown and crispy. Remove and drain on paper towels.
  5. Serve the samosas hot with your favorite dipping sauce.
