Samosa (spiced Vegetable Samosas)

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup vegetable oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 potatoes, boiled and diced
  • 1 cup green peas
  • 1 teaspoon garam masala
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon chili powder
  • Salt to taste
  • Oil for frying

Instructions

  1. In a large bowl, combine the flour and 1/4 cup of oil. Mix well and knead into a firm dough. Cover and let it rest for 30 minutes.
  2. Heat 2 tablespoons of oil in a pan. Add the cumin seeds and sauté until they splutter.
  3. Add the chopped onion and sauté until golden brown.
  4. Stir in the diced potatoes and green peas. Cook for 5 minutes.
  5. Add the garam masala, ground coriander, turmeric, chili powder, and salt. Mix well and cook for another 2-3 minutes. Remove from heat and let the filling cool.
  6. Divide the dough into small balls and roll each ball into a thin circle. Cut each circle in half to form semi-circles.
  7. Take one semi-circle, brush the straight edge with water, and form a cone shape. Fill the cone with the vegetable mixture and seal the open edge tightly.
  8. Heat oil in a deep pan for frying. Fry the samosas in batches until golden brown and crispy.
  9. Remove and drain on paper towels. Serve hot with chutney or sauce of your choice.
