Samosa Ya Nyama (swahili Beef Samosas)

Ingredients

  • 1 lb ground beef
  • 2 onions, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cayenne pepper
  • Salt to taste
  • Pepper to taste
  • 2 tbsp vegetable oil
  • 20 samosa wrappers
  • Vegetable oil for deep-frying

Instructions

  1. In a large skillet, heat 2 tbsp of vegetable oil over medium heat. Add the onions and garlic, and sauté until the onions are soft and translucent.
  2. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  3. Stir in the ground cumin, ground coriander, turmeric, cayenne pepper, salt, and pepper. Cook for an additional 2-3 minutes to allow the flavors to meld. Remove from heat and let the mixture cool.
  4. Take one samosa wrapper and place it on a clean surface. Spoon a heaping tablespoon of the beef mixture onto the center of the wrapper.
  5. Moisten the edges of the wrapper with water, then fold the wrapper over the filling to create a triangle. Press the edges to seal the samosa.
  6. Heat vegetable oil in a deep pan over medium heat. Once the oil is hot, carefully add the samosas in batches and fry until golden brown and crispy, about 3-4 minutes per side.
  7. Remove the samosas from the oil and drain on paper towels. Serve hot with your favorite chutney or dipping sauce.
