Samosa Ya Nyama (zambian Beef Samosas)

Ingredients

  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 12 sheets of phyllo pastry
  • Vegetable oil for frying

Instructions

  1. In a skillet, heat 2 tbsp of vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  2. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  3. Stir in the ground cumin, ground coriander, turmeric, salt, and pepper. Cook for an additional 2-3 minutes to allow the flavors to meld. Remove from heat and let the filling cool.
  4. Preheat the vegetable oil in a deep pan for frying.
  5. Take one sheet of phyllo pastry and cut it into 3 strips. Place a spoonful of the beef filling at the end of each strip, then fold the pastry over the filling to form a triangle. Continue folding the pastry in a triangle shape until you reach the end of the strip. Seal the edge with a little water.
  6. Repeat the process with the remaining phyllo pastry and beef filling.
  7. Fry the samosas in the preheated oil until golden brown and crispy. Remove and drain on paper towels.
  8. Serve the samosas hot with your favorite dipping sauce or chutney.
