Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 1 cup corn kernels
  • 1 cup black beans
  • 1 cup shredded cheese
  • 8 flour tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup enchilada sauce

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and cook until softened.
  2. Add the shredded chicken, corn, black beans, cumin, chili powder, salt, and black pepper to the skillet. Cook for 5 minutes, stirring occasionally.
  3. Preheat the oven to 375°F (190°C). Spread a thin layer of enchilada sauce on the bottom of a 9x13 inch baking dish.
  4. Place a spoonful of the chicken mixture in the center of a tortilla, sprinkle with cheese, and roll it up. Place the rolled tortilla seam side down in the baking dish. Repeat with the remaining tortillas and chicken mixture.
  5. Pour the remaining enchilada sauce over the rolled tortillas, then sprinkle with the remaining cheese.
  6. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  7. Sprinkle the chopped cilantro over the enchiladas before serving.
