Ingredients
- 2 cups shredded cooked chicken
- 1 cup diced onion
- 1 cup diced bell pepper
- 1 cup corn kernels
- 1 cup black beans
- 1 cup shredded cheese
- 8 flour tortillas
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
- 1/2 cup enchilada sauce
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and cook until softened.
- Add the shredded chicken, corn, black beans, cumin, chili powder, salt, and black pepper to the skillet. Cook for 5 minutes, stirring occasionally.
- Preheat the oven to 375°F (190°C). Spread a thin layer of enchilada sauce on the bottom of a 9x13 inch baking dish.
- Place a spoonful of the chicken mixture in the center of a tortilla, sprinkle with cheese, and roll it up. Place the rolled tortilla seam side down in the baking dish. Repeat with the remaining tortillas and chicken mixture.
- Pour the remaining enchilada sauce over the rolled tortillas, then sprinkle with the remaining cheese.
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
- Sprinkle the chopped cilantro over the enchiladas before serving.
