Samosa Ya Nyama (zambian Chicken Pie)

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup vegetable oil
  • 1/2 cup water
  • 1 lb boneless chicken, diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon curry powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Oil for deep-frying

Instructions

  1. In a large bowl, mix the flour and salt. Add the vegetable oil and mix until crumbly. Gradually add water and knead the dough until smooth. Cover and let it rest for 30 minutes.
  2. In a skillet, heat some oil over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant. Add the diced chicken and cook until browned.
  3. Stir in the curry powder, cumin, paprika, salt, and pepper. Cook for another 5 minutes. Remove from heat and let the filling cool.
  4. Divide the dough into small balls. Roll out each ball into a thin circle. Cut each circle in half to form semi-circles.
  5. Place a spoonful of the chicken filling on one half of the semi-circle. Fold the other half over the filling to form a triangle. Press the edges to seal.
  6. Heat oil in a deep pan over medium heat. Fry the samosas in batches until golden brown. Drain on paper towels.
  7. Serve the samosas hot with your favorite dipping sauce.
