Samosa Ya Nyama (zambian Chicken Satay)

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder
  • 1/2 cup frozen peas
  • 1/4 cup chopped fresh cilantro
  • Salt to taste
  • Pepper to taste
  • 12 sheets of phyllo pastry
  • 1/4 cup melted butter

Instructions

  1. In a large bowl, mix the shredded chicken, onion, garlic, cumin, coriander, turmeric, chili powder, peas, cilantro, salt, and pepper.
  2. Preheat the oven to 375°F (190°C).
  3. Place one sheet of phyllo pastry on a clean surface and brush it with melted butter. Repeat with 3 more sheets, stacking them on top of each other.
  4. Cut the stacked phyllo pastry into 6 equal squares.
  5. Place a spoonful of the chicken filling in the center of each square.
  6. Fold the pastry over the filling to form a triangle, then continue folding to the end of the pastry strip. Repeat with the remaining pastry and filling.
  7. Place the samosas on a baking sheet and brush them with melted butter.
  8. Bake for 15-20 minutes or until the samosas are golden and crispy.
  9. Serve hot with your favorite dipping sauce.
