Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 1 pound ground lamb
  • 1 onion, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a large bowl, combine the flour and salt. Gradually add the water and knead until a smooth dough forms. Cover and let it rest for 30 minutes.
  2. In a separate bowl, mix the ground lamb, onion, cumin, paprika, salt, pepper, and cilantro until well combined.
  3. Preheat the oven to 375°F (190°C).
  4. Divide the dough into 12 equal portions. Roll each portion into a thin circle.
  5. Place a spoonful of the lamb mixture onto one half of each dough circle. Fold the other half over the filling and crimp the edges to seal.
  6. Place the samsas on a baking sheet and bake for 25 minutes or until golden brown.
