Ingredients

  • 8 oz thin egg noodles
  • 1 cup shredded chicken or pork

  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1/2 cup chicken broth

Instructions

  1. Boil the egg noodles according to package instructions, then drain and set aside.
  2. Heat 1 tbsp of vegetable oil in a large pan or wok over medium-high heat. Add the minced garlic and cook until fragrant.
  3. Add the shredded chicken or pork to the pan and stir-fry until cooked through.
  4. Next, add the mixed vegetables and continue to stir-fry for a few minutes until they are slightly tender.
  5. In a small bowl, mix together the soy sauce, oyster sauce, sugar, and chicken broth. Pour this sauce over the meat and vegetables in the pan.
  6. Simmer for a few minutes until the sauce thickens slightly. Season with salt and pepper to taste.
  7. In a separate pan, heat the remaining 1 tbsp of vegetable oil over medium heat. Add the cooked egg noodles and spread them out to form a large, flat circle. Cook until the bottom is golden and crispy.
  8. Transfer the crispy noodle nest to a serving plate and top with the meat and vegetable mixture.
  9. Serve the San Pya Thoke immediately, allowing each person to break off a portion of the crispy noodle nest and enjoy it with the savory filling.
