Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb fish fillets, cut into chunks
- 1 lb crab legs
- 1 lb clams, scrubbed
- 1 lb mussels, cleaned and debearded
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 4 cups fish or seafood broth
- 2 cups water
- 2 ears of corn, cut into chunks
- 2 plantains, peeled and cut into chunks
- 2 large yams, peeled and cut into chunks
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and bell pepper. Cook until the vegetables are softened.
- Add the tomatoes, oregano, and cumin. Cook for a few minutes until the tomatoes begin to break down.
- Pour in the fish or seafood broth and water. Bring the liquid to a simmer.
- Add the corn, plantains, and yams to the pot. Cook for about 15 minutes until the root vegetables are tender.
- Gently add the shrimp, fish, crab legs, clams, and mussels to the pot. Season with salt and pepper. Cover and simmer for 10-15 minutes until the seafood is cooked through.
- Adjust the seasoning if needed. Serve the Sancocho de Mariscos hot, garnished with fresh cilantro.
