Ingredients

  • 1 whole chicken, cut into pieces
  • 6 cups chicken broth
  • 2 large potatoes, peeled and diced
  • 2 ears of corn, cut into thirds
  • 2 plantains, peeled and sliced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 bunch of cilantro, chopped
  • 2 scallions, chopped
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the chicken broth to a boil.
  2. Add the chicken pieces to the pot and cook for 20 minutes.
  3. Stir in the potatoes, corn, and plantains. Simmer for 15 minutes.
  4. Add the onion, garlic, bell peppers, cilantro, scallions, cumin, oregano, salt, and pepper. Cook for an additional 10 minutes.
  5. Once the chicken and vegetables are tender, remove from heat and serve hot.
