Ingredients
- 1 whole chicken, cut into pieces
- 6 cups chicken broth
- 2 large potatoes, peeled and diced
- 2 ears of corn, cut into thirds
- 2 plantains, peeled and sliced
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 bunch of cilantro, chopped
- 2 scallions, chopped
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions
- In a large pot, bring the chicken broth to a boil.
- Add the chicken pieces to the pot and cook for 20 minutes.
- Stir in the potatoes, corn, and plantains. Simmer for 15 minutes.
- Add the onion, garlic, bell peppers, cilantro, scallions, cumin, oregano, salt, and pepper. Cook for an additional 10 minutes.
- Once the chicken and vegetables are tender, remove from heat and serve hot.
