Ingredients
- 2 lbs beef, cut into chunks
- 1 lb pork ribs
- 1 lb chicken pieces
- 3 ears of corn, cut into thirds
- 3 large potatoes, peeled and quartered
- 2 ripe plantains, peeled and cut into chunks
- 1 large onion, chopped
- 4 garlic cloves, minced
- 1 bell pepper, chopped
- 2 tomatoes, chopped
- 1 bunch of cilantro, chopped
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- 8 cups beef or chicken broth
Instructions
- Season the beef, pork ribs, and chicken pieces with salt, pepper, cumin, and oregano.
- In a large pot, heat some oil over medium-high heat and brown the meat on all sides.
- Add the onion, garlic, bell pepper, and tomatoes to the pot and cook until the vegetables are softened.
- Pour in the broth and bring to a boil. Reduce the heat to low and simmer for 1 hour.
- Add the potatoes, plantains, and corn to the pot and continue to simmer for another 30 minutes, or until the meat and vegetables are tender.
- Stir in the chopped cilantro and adjust the seasoning with salt and pepper.
- Serve the sancocho hot with a side of rice and avocado.
