Ingredients

  • 2 lbs beef, cut into chunks
  • 1 lb pork ribs
  • 1 lb chicken pieces
  • 3 ears of corn, cut into thirds
  • 3 large potatoes, peeled and quartered
  • 2 ripe plantains, peeled and cut into chunks
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 1 bell pepper, chopped
  • 2 tomatoes, chopped
  • 1 bunch of cilantro, chopped
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 8 cups beef or chicken broth

Instructions

  1. Season the beef, pork ribs, and chicken pieces with salt, pepper, cumin, and oregano.
  2. In a large pot, heat some oil over medium-high heat and brown the meat on all sides.
  3. Add the onion, garlic, bell pepper, and tomatoes to the pot and cook until the vegetables are softened.
  4. Pour in the broth and bring to a boil. Reduce the heat to low and simmer for 1 hour.
  5. Add the potatoes, plantains, and corn to the pot and continue to simmer for another 30 minutes, or until the meat and vegetables are tender.
  6. Stir in the chopped cilantro and adjust the seasoning with salt and pepper.
  7. Serve the sancocho hot with a side of rice and avocado.
