Sandakan Salted Egg Crab

Ingredients

  • 2 lbs (900g) fresh crab, cleaned and cut into pieces
  • 4 salted egg yolks, mashed
  • 1/2 cup unsalted butter
  • 5 cloves garlic, minced
  • 1 sprig curry leaves
  • 2 red chili peppers, sliced
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper

Instructions

  1. In a large wok or pan, melt the butter over medium heat.
  2. Add the minced garlic and stir-fry until fragrant.
  3. Add the mashed salted egg yolks, curry leaves, and sliced chili peppers. Stir-fry for 2-3 minutes.
  4. Add the crab pieces to the wok and stir to coat them with the salted egg sauce.
  5. Season with sugar, salt, and white pepper. Stir-fry for 10-12 minutes until the crab is fully cooked and coated with the sauce.
  6. Transfer the Sandakan Salted Egg Crab to a serving dish and garnish with additional curry leaves and chili slices if desired.
