Sandakan Salted Egg Crab

Ingredients
- 2 lbs (900g) fresh crab, cleaned and cut into pieces
- 4 salted egg yolks, mashed
- 1/2 cup unsalted butter
- 5 cloves garlic, minced
- 1 sprig curry leaves
- 2 red chili peppers, sliced
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
Instructions
- In a large wok or pan, melt the butter over medium heat.
- Add the minced garlic and stir-fry until fragrant.
- Add the mashed salted egg yolks, curry leaves, and sliced chili peppers. Stir-fry for 2-3 minutes.
- Add the crab pieces to the wok and stir to coat them with the salted egg sauce.
- Season with sugar, salt, and white pepper. Stir-fry for 10-12 minutes until the crab is fully cooked and coated with the sauce.
- Transfer the Sandakan Salted Egg Crab to a serving dish and garnish with additional curry leaves and chili slices if desired.
