Sandakan Salted Fish Fried Rice

Ingredients

  • 2 cups cooked rice
  • 100g salted fish, diced
  • 2 eggs, beaten
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red chili, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon sugar
  • 1/4 teaspoon ground white pepper
  • 2 tablespoons cooking oil

Instructions

  1. Heat 1 tablespoon of cooking oil in a wok or large skillet over medium heat.
  2. Add the beaten eggs and scramble until just set. Remove from the wok and set aside.
  3. Heat the remaining 1 tablespoon of cooking oil in the same wok. Add the diced salted fish and stir-fry until crispy. Remove from the wok and set aside.
  4. In the same wok, sauté the garlic, onion, and red chili until fragrant.
  5. Add the cooked rice to the wok and stir-fry with the aromatics.
  6. Return the scrambled eggs and crispy salted fish to the wok.
  7. Add soy sauce, oyster sauce, sugar, and ground white pepper. Stir-fry until everything is well combined and heated through.
  8. Transfer the fried rice to a serving dish and garnish with sliced spring onions, if desired.
