Sandakan Salted Fish Fried Rice

Ingredients
- 2 cups cooked rice
- 100g salted fish, diced
- 2 eggs, beaten
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red chili, sliced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1/2 teaspoon sugar
- 1/4 teaspoon ground white pepper
- 2 tablespoons cooking oil
Instructions
- Heat 1 tablespoon of cooking oil in a wok or large skillet over medium heat.
- Add the beaten eggs and scramble until just set. Remove from the wok and set aside.
- Heat the remaining 1 tablespoon of cooking oil in the same wok. Add the diced salted fish and stir-fry until crispy. Remove from the wok and set aside.
- In the same wok, sauté the garlic, onion, and red chili until fragrant.
- Add the cooked rice to the wok and stir-fry with the aromatics.
- Return the scrambled eggs and crispy salted fish to the wok.
- Add soy sauce, oyster sauce, sugar, and ground white pepper. Stir-fry until everything is well combined and heated through.
- Transfer the fried rice to a serving dish and garnish with sliced spring onions, if desired.
